The secret to getting rid of the bitter taste is: 1) Cook the peel separately first, to leach out the bitternes, and DISCARD that water. 2) PEEL the membranes off the pulp sections--these also add bitter taste to the cooked product. I use WAY LESS SUGAR than any recipe I've seen yet, and it tastes GREAT. However, with so little sugar, I do have to add pectin to make the cooled product's texture not runny.
