I hope everyone is having a wonderful day filled with loads of good food and great company. Due to Jared's work schedule, we had to stay in Atlanta for Christmas. It is our first Christmas that we have spent just the two of us, unless you count our dog, Sweetpea and our cat, Peeny (which we do). I made lasagna for lunch today, along with some garlic bread. The lasagna was just made with a jarred tomato sauce (I know, it's kinda cheating, but I'm tired!), along with the Cashew Ricotta from Veganomicon (pg. 206), lasagna noodles and homemade toasted bread crumbs for good measure. I made French bread yesterday so I slathered a few slices up with whipped Earth Balance and garlic to go along with the lasagna. Not exactly traditional Christmas fare, but it was still pretty good. For dinner I think we are just going to have salads and maybe some left over lasagna!

Happy holidays!!! I'm catching up on your posts and omg, great minds think alike! I'm gonna post soon and you'll see what I'm talking about:-) In the past few days I have made/will make similar stuff to you this month ("chiken pot pie"...lasagna) and I swear I hadn't looked at your blog before I decided to make that stuff! Cue in Twilight Zone music here.
I hope you and Jared have/had a wonderful holiday! This is also one of the few holidays where its just us (and the dogs :-)) due to my work as well and its really nice.
Your food looks great as always...and jarred tomato sauce is not cheating! Sometimes its nice to have little shortcuts especially when busy.

Mmmm, vegan lasagna. Still gotta try it! We went non-traditional for Christmas eats too, but it was yum. Hope you and Jared and the pets enjoy this week between Christmas and New Years.

even though you had a more quaint Christmas than you're used to, it still sounds like you had a wonderful holiday; and the lasagna looks delicious!! sometimes jarred sauce will just have to do - don't be so hard on yourself! :0)
