I was scanning through LiveJournal's VEGAN FOOD PICS and came across this beautiful looking mac and cheeze. It almost looked too good to be true so I had to test it out. Oh my god. This seriously was the best vegan mac and cheeze I have yet to try. It had just the right amount of nutritional yeast (meaning, it wasn't over powering) and was super creamy. The recipe can be found here. I used original/plain hemp milk instead of soy milk, shell pasta and added both black pepper and cayenne pepper. I used crushed crackers on top, although I'm sure toasted bread crumbs would be great too.

Droolworthy. Wow. I am making this, this weekend, for sure! I love that it doesn't require the making of a nut cheese--the last mac and cheese I tried did, and it was yum, but this would be easier and it just looks...incredibly good. I WANT IT NOW.

Hey everyone! I hope anyone who makes this has the same kind of luck I did with it. If you do make it, let me know how it turned out. Jared reheated it in the oven and it lost it's creaminess, but it still tasted amazing!

Hey! I know this is an old post, but hopefully you get those email notifications when people post comments like I do. :) I'm wondering how many people you think this serves... I made this once (it was awesome), and think I halved it to serve about four... But I can't frickin' remember & my brother wants to make it for a dinner party potluck tonight (yay!! He's not even a vegetarian, let alone vegan).
Do you think it would serve 10 people for side-dishes, or should we double it? I originally thought I could multiply the recipe by 1.5, but that seems like possible trouble... Let me know what you think! Thank you!
