Even before I was vegan, I came across the famous Seitan O'Greatness recipe and saved it for future culinary adventure. I finally got around to trying it out today, and I must say it turned out pretty good. I basically followed the recipe except that I only had about 2 tbsp of tomato paste around, so I had to use about 2 tbsp of ketchup and I also substituted bottled teriyaki sauce for the tamari. For some reason, it took me a long time to make this . . . I guess because there are a lot of ingredients and I am not use to measuring out everything. Then, once I had the dough kneaded, rolled in a log and wrapped, it had to bake for 90 minutes! Luckily, it was worth the time. If you haven't made this yet, you really should.
Other than making the Seitan O'Greatness today, I haven't been feeling that peachy and haven't felt much like cooking or eating lately, which is very unlike me. So, I have been eating simple salads just to get something in me . . . Boring, but just about the only thing that has sounded good.

I made the S o' G for the first time a few weeks ago, and was pretty happy with it. It was my first seitan-making experience, and it was pretty easy, after I'd measured everything out. It was made all the better by the tater tots we ate for lunch that day, since the oven was already on ;)
oooh, the seitan looks delish - I just had some tonight, actually :0)
it seems like everyone in the blogging world (myself included) has not been feeling well... I for one haven't had much of an appetite, and last night I was VERY ill (I'll spare you the details, haha). I do hope you feel better!!
Aw, sorry to hear you're not feeling so good, Lori. Salads and maybe vegetable soups are surely good things to eat then. This one looks good--glad your SoG turned out well, I reckon I'm gonna have to try it again, with liquid smoke added for a twist in the flavour!

i've been dealing with the loss of appetite thing, too. i think it's the heat, even though my body is saying 'hey! it's fall!'
I think I'm the only person on the internets that hasn't made the seitan o'greatness. I better get on that.
I think we all need a break every once in awhile from the constant cooking. While I love it, sometimes I admit that if I didn't want to blog about the variety of food I eat, I wouldn't be eating such a variety! There are some weeks I just chill out and make boring stuff too (even though I don't think salads are boring, yours looked good!)
Glad you liked the So'G, I have made it once awhile back (it was actually my very first blog post!) and have been wanting to make it again ever since!
I know I should try this sometime, but I'm still wary about it - what's the flavor taste like?
monika k- i for sure need to adjust the seasonings to my taste and it was a bit "wheaty" but it was still pretty good. the heavy use of cinnamon and all spice are strong . . . but it works. i think i would like red chili flakes in it and italian spices more.
it was a nice substitute to tofu based products, i must say.
That seitan looks good. Every time I make seitan the texture comes out too spongey (though I've only made it like 3 times). Oh, I also tried out that mac and cheese recipe that you posted about awhile back (I just posted about it). It was good! Though like your husband said, it didn't get creamy when rewarmed.
I'm the only person on the internet who doesn't care for the Seitan o' Greatness. Not just the flavor, which I can modify a great deal - but the texture too... plus too many ingredients!! If it has more than, like, 5 or 6 I usually lose interest. But..... I do love making seitan and have a couple recipes I use frquently.
We love the Seitan O' Greatness around here, although I find I like it best when grilled a bit crispier.
