break from a very trying day

UGH! Getting into school is so frustrating. I don't even know how I handled this the first time I went to college at 17/18 years old. I was informed today I gotta do a million more things despite thinking I had everything in order to get in this summer. I'll spare you the details but I ran into a roadblock with my transcripts, in state tuition petition and can't get the same answer from different "advisers" letting me know exactly what I need or don't need to take to get into the nursing program. Anyway, I've been stressed and haven't felt like cooking, or even eating for that matter. I know I need to keep my head clear to deal with this Dilbert-esque college, so, to clean out my fridge and get a power punch of nutrients, I made a veggie plate for dinner tonight. I roasted a head of cauliflower with olive oil, salt and Herbes de Province as well as a broccoli spears and a bunch of asparagus in olive oil, salt and black pepper. Needing some comfort, I also made some smashed potatoes with an Earth Balance, garlic, maple syrup and nutritional yeast sauce.

I can always count on my sister Erin to send me pics of my adorable nephew, Gabriel. He always makes me smile, even on the worst of days.

Ahh, the process of trying to get into school is often even MORE stressful than being IN school - best of luck!! Hang in there!!

Oooh, watermelon - I've missed it so! I must remember to pick some up at the farmer's market.

Sorry to hear about your day!! Don't worry, it's just a little hiccup and everything will work out in your favor and next thing you know you'll be in nursing school and be at the top of your class!!

Ugh, good luck dealing with the institution... bureaucracy sucks so hard. That food looks fantastically comforting though! Good brain (and patience) food!

Have you had to supply your vaccination record yet? Don't want to stress you out more, but I am currently going through the same process and it is taking FOREVER to get verification of everything from the different doctors I've seen over the years. Don't be like me - start early to avoid stress later! :)

How frustrating! I hate all the paperwork and back and forth stuff! Such a headache.

That meal is beautiful. I would like that right now very much! Very much. Mmmmmmmm.

I totally know how you feel. I had to create a portfolio and a letter of intent for the journalism program I'm hoping to get into, and I still have to do a two-hour entrance exam. After that I MIGHT get into the program IF they don't wait-list me. Sigh. Hang in there. It'll all be worth it in the end :o)

Honestly, I have no idea how I got into school at all, considering how arduous it is to apply and my poor credentials. Just know that tons of people in the blogosphere, myself included, are rooting for you, and I know that this will all work out sooner or later. :)

And by the way, I am beside myself with envy at that watermelon. The stuff I find is still pale and overpriced!

don't let the man hold you down! the getting in is the hardest part of school, so just hang in there. glad you had some veggie and nephew love to see you through.

I feel your pain! I graduated a few years ago but I remember working, school and just juggling life can be a lot sometime. thank goodness for great food and cute babies

Jes- no, actually Georgia Perimeter College (they have the best nursing program in the area). i think and know its like this at just about every college or university.

good luck with that...I will probably have to deal with something similar when I get a chance to go back. I originally got my degree in political science, and now I want to do information technology. It will be amusing to see how much of my stuff even transfers.

Good luck with the process! I think the whole thing would've been a lot more fun if I had had veggie plates like that to enjoy.

Though school and all this work may be terribly stressful, I'm sure it will all pay off in the end!

Oh man- that nooch sauce on the potatoes! It looks absolutely amazing (along with the rest of the food)
